Kid Recipe Winner #1
We have our first Kid Recipe Winner!!! This young winner is named Kevin. I actually got the privilege to meet Kevin when the Olympic team was training in Palo Alto, California before we departed for Singapore and on to Beijing. Kevin is currently 12 years old and says he learned to swim in preschool. Way to go Kevin, keep up the good work!
Stuffed Potatoes
I really liked the simplicity of this recipe. Kevin's Stuffed Potatoes give kids an easy and healthy snack to have before practice and/or a meet. The other great thing about this recipe is that it allows each person to somewhat customize it to his/her own liking. If you want to add some protein throw some chopped chicken on top. For some added nutrients maybe top the potato with some red bell peppers, onions, or thinly sliced carrots. Potatoes have a high starch/carbohydrate content that will keep our bodies fueled and ready to go for hours.
Ingredients:
- 4 potatoes
- 2 tablespoons of magarine (because it is healthier than butter)
- 1/2 cup grated cheddar cheese (or “lowfat” grated cheese)
- 1/4 teaspoon of salt
- 1/8 teaspoon of pepper
- 1/4 cup of non fat milk
- 1 cup of green onion (optional)
Preparation:
- Scrub potatoes clean
- Pierce potatoes (so they don't explode) and bake in microwave oven for the following times:
1 potato-4 minutes
2 potatoes-6minutes
3 potatoes-8 minutes
4 potatoes-10 minutes
- Carefully take potatoes out of microwave oven, using clean hot pad.
- While potatoes are still warm. cut the potatoes in half length-wise. Using a spoon scoop out all the filling and put into a large bowl. Note: keep the skins of the potatoes
- Using an electric mixer, mash potatoes until they are in fine lumps (you could also do this by hand with a masher of some sort).
- Add margarine and milk, continue beating until smooth.
- Stir in cheese, salt, pepper, and green onion (optional). Don't use the electric mixer for this part
- Scoop the mixture into the potato skins
- Place stuffed potatoes on a glass baking dish
- Place in microwave for 2-4 minutes
- Using serving spoon and serve on individual plates
- Enjoy
