Salmon Jerky:
Smokey, flavorful...never fishy!
Ingredients:
1/2 to 3/4 pound salmon fillet
Try other fish as well, but the natural fat in salmon makes it sizzle.
Brine to marinate salmon
½ cup orange juice
¼ cup cider vinegar
1 cup water
2 tbsp brown sugar
½ tsp kosher salt
A dash of garlic, pepper or even hot pepper flakes to taste.
Preparation:
I use a stovetop smoker from Camerons. It's easy and inexpensive. Mine works absolutely great.
Thinly slice the fillets as shown on my video (click the photo at right). Marinate for a minimum of 30 minutes and up to several hours. You'll know the brine is working as the salmon begins to take on a slightly different color. Over time, you will learn how much you like to marinate. Start with a little and work your way up.
Use low to medium heat.
If your fillets are cut evenly, they will cook evenly. Thin ones become crispy, almost like bacon.
